Pulled Pork Salad

Cook Time: 2 min.
- 3oz pulled pork from Baja Style Carnitas or similar recipe
- 2cups mixed greens, washed, dried, and torn into bite-sized pieces
- 1/4of a small green apple, diced
- 2Tbsp homemade Cilantro Lime Vinaigrette, or bottled dressing made from an avocado oil base
- Optional: Grated radish, microgreens, pepitas, sunflower seeds
- Place prepared lettuce and diced apple in a salad bowl and toss with dressing until evenly coated.
- Arrange pork and optional add-ins on top of greens, and dig in!
