Poached Eggs with Smoked Salmon

Serves 1

Ingredients: Directions:
  1. Bring a small pot of water to a low simmer.
  2. Add salt and a splash of white wine vinegar to help flavor and cook the eggs.
  3. Crack the eggs into the water and release from bottom of the pan with a spoon.
  4. Cook for 2-3 minutes or until eggs are done to your liking.
  5. Remove and drain on a paper towel.
  6. To plate, curl smoked salmon in a bed on bottom of the plate. Add optional items in center. Top with eggs and a dollop of cream cheese. Crack black pepper over the top with a drizzle of olive oil.
