Pesto Egg Scramble

Cook Time: 15 min.
- 1Tbsp olive oil
- 1cup fresh spinach
- 6large farm eggs
- 2Tbsp pesto
- Fine sea salt and freshly ground pepper
- Heat olive oil in skillet over medium heat, and saute spinach just until wilted.
- Whisk eggs, add to pan, and stir in pesto.
- Cook over low heat until eggs are set, stirring gently a few times.
- Season to taste.
Serve with sausage links or bacon.
