1/2cup almond butter, or sub unsweetened peanut butter
3Tbsp collagen powder
2Tbsp coconut flour
2tsp powdered monk fruit sweetener, such as Lakanto brand
1/2tsp vanilla extract
1/4cup keto-friendly dark chocolate chunks, such as Lily's brand
Optional: 1 Tbsp raw cacao powder
Directions
In a food processor (or a small mixing bowl), combine the almond butter, collagen powder, coconut flour, monk fruit, and vanilla thoroughly, until a loose dough forms.
Mix in the chocolate chunks by hand. If dough is too moist, you can add more collagen/coconut flour. For a more chocolatey version, you can add a tbsp. of raw cacao powder, such as Navitas brand.
Scooping out about 1 tbsp of dough at a time, roll into little bite-sized balls. You should have about 10 protein bites when finished.
Store in refrigerator and use for quick snacks and a little protein boost!
